Ayam Goreng Recipe
What is Ayam Goreng? Ayam Goreng, also known as fried chicken, which is so popular in Indonesia and completely different than the breaded American version. Ayam Goreng is a marinade of aromatic garlic, turmeric, and lemongrass infuse this dish with fresh tropical flavor, and just a few sizzling minutes in hot oil (traditionally coconut oil) keeps the chicken juicy, finished with a perfect crisp on the outside. On the island of Bali, every family crafts their own variation of this recipe, experimenting with local spices to achieve the perfect tasty combination. Ayam goreng is traditionally enjoyed in dishes of fried rice, tossed atop stir fried vegetables, or devoured fresh out of the skillet using your fingers.

Serves 3-4 Prep time: 30 min, Cook time: 1 hr Ayam Goreng Ingredients:

2 1/2 to 3 pounds Chicken, cut into serving pieces

3 or 4 Garlic cloves, minced

1 tbsn Coriander

2 tspn Turmeric
-
2 Bay leaves
-
Pinch of salt and pepper
-
2 cups water or coconut water
-
Oil for deep frying
Ayam Goreng Preparation:

In a large bowl, mix the chicken with the garlic, coriander, turmeric, bay leaves, salt and pepper. Refrigerate and marinate for at least one hour (longer hours for better quality).

Add the chicken, marinade and water or coconut water to a large pot and bring to a boil over medium-high flame.

Reduce heat to medium-low and simmer for about 30 minutes, or until the liquid is reduced and the chicken is cooked through.

Remove the chicken from the pot and set aside to cool
- Heat the oil in a deep fryer, skillet or wok and add the chicken pieces and fry until golden brown and crispy on the outside.
- Skim any crumbs or crispy bits from the oil and sprinkle them over the chicken as a garnish.
