Bubur Ayam Recipe

What is Burbur Ayam? Burbur Ayam is an Indonesian chicken congee. It is rice congee with shredded chicken meat served with some condiments, such as chopped scallion, crispy fried shallot, celery, tongcay (preserved salted vegetables), fried soybean. Some variations of this dish is formed outside of java including corn, cassava and fish, while a sweeter version.

Burbur Ayam Recipe

Serves 3-4

Burber Ayam Ingredients:
30 min, Prep time: 30 min

  • 3⁄4 cup long grain rice

  • 10 cups chicken stock, divided

  • 1 tsp salt

  • 4 boneless skinless chicken breasts, shredded

  • 4 green onions, sliced

  • 1⁄2 cup French-fried onions or 1⁄2cup crispy fried shallots

  • 2 red birds eye chilies, chopped

  • 1 inch fresh ginger, peeled sliced

Burber Ayam preparation:

  1. In a large pot, bring 9 cups chicken and rice to a boil.

  2. When the rice is boiling, turn the heat down to medium low. Place the lid on the pot, tilting it to allow steam to escape

  3. Cook on medium low to low heat, stirring occasionally, until the rice has the thick, creamy texture of porridge (1 1/2 hours).

  4. About 30 minutes before the rice is ready, in a saute pot add the shredded chicken and the remaining cup of chicken stock and bring to a simmer.

  5. When ready to serve, ladle rice porridge into bowl and top with 1/8th shredded chicken and your choice of green onions, french-fried onions, ginger slices and fresh chilies.
