Gado-Gado Recipe Ingredients

Gado-Gado, or lotek, literally means “mix-mix.” The term is often used to describe situations that are all mixed up - Jakarta, for instance, is a Gado-Gado city. Gado-Gado is essentially a vegetable salad with boiled long beans, spinach, potato, corn, egg and bean sprouts coupled with cucumber and tofu tossed with peanut sauce dressing. Once vegetables has been evenly coated with the peanut sauce, it is sometimes garnish with fried shallots and krupuk. The gado-gado peanut sauce is sometimes made to order with fried crushed savory peanuts, sweet palm sugar, garlic, salt, chillies, tamarind, a squeeze of lime, and chili pepper to taste, however, particularly in the West, the sauce is often prepared ahead of time.
