Rawon (Beef Soup)

When Rawton is served with rice, it is called Nasi Rawon or Rawon Rice. The soup is made by sauteing in oil a ground mixture of garlic, shallot, keluak, ginger, candlenut, turmeric, red chili and salt.That mixture is poured into boiled beef stock and beef. To complete this soup, it is then seasoned with lemongrass, galangal, bay leaves, kaffir lime leaves and sugar, and finally, garnished with fried shallot, green onion, baby bean sprouts, salted preserved egg, shrimp crackers and sambal chili sauce on the side.
