What is Es Delima? Es Delima is an Indonesian dessert drink made with water chestnut pieces coated in red tapioca flour, resembling pomegranate seeds, served in sweet coconut milk over ice.

Es Delima Ingredients:

  • ½ cup water chestnut (diced into small cubes)

  • Red food coloring (a few drops)

  • ½ cup tapioca flour

  • 1 cup coconut milk

  • 1–2 tbsp sugar (adjust to taste)

  • ½ tsp salt

  • Crushed ice

  • Cocopandan syrup or condensed milk (to sweeten, optional)

Es Delima Preparation:

  1. In a bowl, mix diced water chestnut with red food coloring until evenly coated. Let sit for a few minutes.

  2. Toss the colored water chestnut cubes in tapioca flour until fully coated. Shake off excess flour using a strainer.

  3. Bring a pot of water to a boil. Add coated water chestnuts and cook until they float (about 2–3 minutes).

  4. Remove and immediately transfer to a bowl of ice water to cool and set. These are your “delima” (red rubies).

  5. In a saucepan, warm the coconut milk with sugar and salt. Stir until dissolved. 

  6. To serve, scoop red rubies into a glass, pour in sweetened coconut milk, and top with crushed ice.

  7. Drizzle with syrup or condensed milk for extra sweetness, if desired.

  8. Stir gently and enjoy your refreshing Es Delima!
