What is Asinan Sayur? Asinan Sayur is a salad that contains many different aromas and enhances your taste buds thanks to the variety of ingredients. The secret is in the dressing, a thin peanut sauce swirled with palm sugar to offset the salty snap of preserved mustard leaf, carrot, cabbage and cucumber. The krupuk mie are Indonesian noodle crackers and comes from a yellow disc made with egg noodles.

Asinan Sayur Recipe
- 200 gr of coleslaw mixed veggie, slice thinly
- Bunch of mustard leaf, slice thinly
- 1/2 carrot, slice thinly
- 1/2 cucumber, slice thinly
- 150 gr of bean sprout
- 2 blocks of fried tofu, cut into small squares
- 150 gr of peanut, fry it with a little bit of oil
- 2 Krupuk mie
Sauce
- 5 cloves of garlic, coarsely crushed
- 150 gr coconut sugar
- 2 tbsp of sambal ulek
- 1 lime
- 1 tsp salt
- 150 gr sugar
- 500 ml water
- Shrimp paste (optional)
Asinan sayur preparation:
- Slice the Veggies.
- Ground the garlic, shrimp paste, sambal ulek, salt, sugar and coconut sugar.
- Bring to boil 500 ml water and cook until sugar dissolved.
- Put grounded ingredients into the pan at medium temperature
- Mixed well.
- Set aside and let it cool.
- Put all the vegetables, sauce and tofu in a big bowl.
- Mixed well.
- Drizzle the lime juice into the mix.
- Let it in a fridge for at least 1 and a half hours. (longer refrigeration the better)
- Top it of with some fried peanuts
- Last, add the krupuk mie on the side of the dish.
