Siomay Recipe

What is Siomay? Siomay, is an Indonesian steamed fish dumpling with vegetables served in peanut sauce derived from Chinese Shumai. This dish is a complete portion comes with a steamed potato, cabbage, egg, and bitter gourd, and is served with a boiled peanut sauce similar to gado-gado. It is considered a light meal that is similar to the Chinese Dim Sum, but is cone shaped.

Siomay Recipe

serves 8

Soimay Ingredients:

Fish Paste

  • 300 gram Spanish mackerel  fillet

  • 1 tbsp sesame oil

  • 1 egg

  • 1 scallion, thinly sliced

  • 1 tsp salt

  • 1 tsp sugar

  • pinch of pepper

  • 50 gram tapioca powder

  • 100 ml water

Siomay

  • 2 bitter gourd, cut into 2 inches rounds and scoop out the fibrous center

  • 1 firm tofu, cut into 4 triangles

Accompaniments

  • 4 potatoes, each cut into quarters and steamed

  • 1 cabbage, cored, chopped and steamed

  • 8 hard boiled eggs

  • 8 kaffir limes

  • sweet soy sauce

Peanut Sauce

  • 300 gram dry roasted peanut

  • 4 garlic cloves

  • 5 red chilies

  • 2 tbsp sugar

  • 2 tbsp salt

Siomay Preparation:

Fish Paste

  1. Pulse mackerel in a food processor, then transfer to a bowl and mix well with the rest of the ingredients. Set aside.

Siomay

  1. Stuff each round of bitter gourd with the fish paste.

  2. Scoop out the middle part of tofu and mix this with equal amount of fish paste and re-stuff the mixture back into the hollowed tofu.

  3. Steam stuffed bitter gourd and stuffed tofu until a toothpick comes out clean, about 10 minutes.

  4. Optional: if you have leftover fish paste, prepare a boiling water in a pot, then drop tablespoonful of fish paste into the boiling water. The fish paste is fully cooked when it floats to the surface.

Peanut Sauce

  1. Grind the peanut in a food processor. Transfer to a mixing bowl.

  2. Heat a skillet and dry frying the garlic and chilies,

  3. Then grind these in a food processor. Add this to the bowl of peanut.

  4. Add sugar and salt into the ground peanut, garlic, and chilies. Mix well. Add just enough water to make a thick paste.
